You can use this recipe with any chicken parts, I like using the wings and drumettes. The package for this combo is usually called a Party Pack of wings. If yo have a difficult time finding this at you local stores, just buy the drumettes and wings separately.

Things You Will Need:
Cutting board
Chef’s knife
Large mixing bowl
Small mixing bowl
2 ziplock bags

8-10 wings per pound so purchase according to your crowd.

4-6 pounds wings and drumettes
3-4 onions, sliced
2 lemons, sliced
1/4 cup vegetable oil
1 heaping Tbs. Aleppo pepper
1 Tbs. saffron threads
4Tbs. boiling water
2 Tbs. kosher salt
1 Tbs. ground black pepper

Place saffron in small mixing bowl and allow to steep for 5 minutes. Give the onions a good squeeze and place in large mixing bowl. Add in the remainder of the ingredients to the bowl, including the saffron water, and mix thoroughly. Place mixture into ziplock bags and place in the refrigerator for at least 2 days. I really like a 3 day marination on the wings, the intensity of all the flavors just come together so nicely. Skewer, grill and Enjoy!

I love squezzing a fresh lemon onto the chicken right as it comes off the grill. The added acidity just brightens the whole thing up. Maybe even a light sprinkleing of kosher salt, that is compelety left to choice.

  1. Hi there! I do follow your instruction and even step by step but the result was not that great. Maybe because i did not use a kosher salt as you a main ingredient. I just use an ordinary iodize salt. It’s not that perfect but i think the taste is barely enough for my family. Thanks for sharing.

    Hi Simply A, thank you for sharing. I can not tell you how important it is to use Kosher salt. I never use table salt in my kitchen, it works differently against the protien. What kind of saffron did you use? Email me if you would like to go over the entire recipe. Thanks!
